Habersham Central High School opened in Mount Airy, Georgia, in 1969 after several smaller schools in Habersham County were consolidated. Created by the local Board of Education, it began with about 400 students. The Raiders football team was among the first athletic programs and soon became a familiar part of school life.

During the 1970s, the school added mathematics and science courses, opened its first full library, and built new athletic fields and training facilities. Population growth led to another construction phase in 1985, when a new wing added classrooms and laboratories. The school built a modern stadium and renovated older sports facilities.

In the 1990s, Habersham Central added an auditorium for school events and performing arts. Computer labs introduced information technology education in the county. In 2002, the school moved to a new campus with larger classrooms, updated laboratories and extensive sports facilities, giving it room to expand academic and vocational study.

From 2005 to 2010, Advanced Placement courses allowed students to earn college credit, while business and technology classes provided practical training. In the 2010s, a 4×4 schedule allowed up to 32 credits, and dual enrollment opened access to college courses. By the 2020s, enrollment had reached about 1,525 students, with a student-teacher ratio of 17:1. In 2023, the school continued its academic, athletic, and extracurricular programs across Habersham County.
