The Bonefish Grill logo is associated with a restaurant atmosphere focused on fresh fish and open grilling. It conveys simplicity, quality, and hospitality, emphasizing taste and comfort.
Bonefish Grill opened on January 15, 2000, in St. Petersburg, Florida, created by two friends, Tim Curci and Chris Parker. Both had worked at the Hops Restaurant and Brewery chain and decided to open their seafood establishment.
In an era of standard seafood restaurants with typical nautical decor, the partners emphasized sophistication and urban style, dubbing their concept “polished casual,” a term that later became officially registered. The name Bonefish Grill was chosen after considering multiple options, including “Big Eyed Tuna.” The menu featured eight types of fresh fish, delivered daily by air.
After just a year and a half of successful operation, the restaurant was acquired by Bloomin’ Brands. Despite the death of co-founder Chris Parker in 2004, the chain continued actively developing, opening its 100th restaurant by 2006.
Recent years have been challenging, marked by closures of unprofitable locations, the introduction of new formats and menus, and experimentation with lunch services and “social hours.”
Today, Bonefish Grill remains a recognizable brand in the US seafood restaurant market.
Meaning and History
What is Bonefish Grill?
An American restaurant chain offering a variety of dishes made from fresh seafood. Guests can try fish prepared over an open flame and served with signature sauces. The restaurant’s specialty, crispy and spicy shrimp, is especially popular. Unlike fast-food venues, this chain offers restaurant-quality service and a cozy atmosphere inspired by coastal settings.
2000 – today
At the center of the Bonefish Grill logo is a horizontally stretched fish skeleton. A large head with a detailed eye and mouth transitions into a spine with short ribs and ends with a tail. The skeleton’s color is brown olive.
Above the image, the name BONEFISH is placed in a semicircle. The type is large, black, with vertically elongated letters. Below the skeleton, the word GRILL is added, executed in the same style.
The skeleton image is connected to the name and the restaurant’s marine theme. It emphasizes the restaurant’s atmosphere, where classic seafood dishes are served in unconventional ways. The symbol refers to fish-based cuisine and creates a light, ironic, humorous tone. The brand design office, Brand Architecture, created the logo.
